Ruebens in Slow Cooker
Surprisingly good and very easy. Try it with our *Homemade Thousand Island Dressing*.
20 minutes prep, 2-3 hour cooking,  8-10 servings

Ingredients
1 lb.Corned beef, shaved and chopped
1 lb.Sauerkraut, well drained
1 ½ lb.Swiss cheese, cubed
12 oz.Thousand island dressing (try our homemade recipe here: *Homemade Thousand Island Dressing*)
pinchCaraway seed
2 loavesRye or pumpernickel bread
Preparation
1. Mix 1 lb. corned beef, 1 lb. sauerkraut, 1 ½ lb. Swiss cheese, 12 oz. Thousand island dressing, and a pinch of caraway seed in slow cooker .
2. Set the crock pot to low heat and cover.
3. Cook until cheese is melted, about 2-3 hours.
4. Serve the mixture on 2 loaves of rye or pumpernickel bread.
