Vegan Egg Salad Alternative
Better than egg salad and vegan if you use vegan mayo.

Ingredients
1 canChickpeas, drained and rinsed
2 TbspShredded carrot
2 TbspMinced red onion
2 TbspMinced fresh parsley
2 TbspVegan mayo
1 tspDijon mustard
pinchGarlic powder
1 TbspLemon juice
to tasteSalt
to tasteFreshly ground black pepper
Preparation
1. In a medium bowl , mash the chickpeas (1 can) with a fork to desired consistency.
2. Add the shredded carrot (2 Tbsp) to the bowl .
3. Add the minced red onion (2 Tbsp) to the bowl .
4. Add the minced fresh parsley (2 Tbsp) to the bowl .
5. Add the vegan mayo (2 Tbsp) to the bowl .
6. Add the Dijon mustard (1 tsp) to the bowl .
7. Add the garlic powder (a pinch) to the bowl .
8. Add the lemon juice (1 Tbsp) to the bowl .
9. Add salt and freshly ground black pepper to taste.
10. Mix well to combine all ingredients.
11. Taste and adjust the seasonings if necessary.
12. Serve on grilled sandwiches, with crackers, or spoon if no one is looking.
