Thai Pork Noodle Bowl
This ramen-style Thai noodle bowl can easily be adjusted to your liking.

Ingredients
1 poundGround pork
1 TbspRoasted peanut oil
2 TbspFresh ginger, finely chopped
1 largeRed Onion, finely chopped (1 to 1½ cups)
2 tspTurmeric
1 TbspChili Garlic Sauce
4 TbspSoy sauce
1 to 2 tspFish sauce (optional)
5 cupsChicken broth
8-12 ozFresh mustard greens, arugula, or spinach
6 ozRice noodles (Vermicelli)
to tasteFresh cilantro
¼ cupChopped dry roasted or salted peanuts (garnish)
optionalLime wedges (garnish)
Preparation
1. Boil a pot of salted water to cook noodles.
2. Cook noodles according to package directions.
3. Drain and rinse under cold water, and set aside.
4. Heat peanut oil (1 Tbsp) in a large pot or Dutch oven.
5. Add ginger (2 Tbsp) and all but ¼ cup of the red onion (1 large).
6. Cook, stirring occasionally, until tender, about 5 minutes.
7. Add pork (1 pound), turmeric (2 tsp), chili garlic sauce (1 Tbsp), soy sauce (4 Tbsp), and fish sauce (1 to 2 tsp).
8. Cook and break up meat, until cooked, about 5 minutes.
9. Add chicken broth (5 cups) and greens (8-12 oz).
10. Bring to a boil and reduce to a simmer, cooking until greens are wilted and tender, about 5 minutes.
11. Taste and season with salt if needed.
12. Divide noodles among 3-4 serving bowls.
13. Divide the broth/pork mixture among the serving bowls.
14. Top each bowl with chopped cilantro, chopped peanuts, and a lime wedge.
