Greek Cucumber Sauce
Also known as Tzatziki. Serve with Gyros.

Ingredients
2 cupsPlain full-fat greek yogurt
1English cucumber (see notes for regular cucumber)
4 clovesFresh garlic
1Lemon
2 TbspFresh Dill (or 2 tsp dried)
to tasteSalt and pepper
Preparation
1. Peel and grate cucumber with box grater.
2. Wash the lemon and get 2 tsp of lemon zest with the small side of the box grater.
3. Squeeze 2 Tbsp of lemon juice from the lemon.
4. Peel and mince the garlic.
5. If using fresh dill, chop finely (2 Tbsp).
6a. Add to a bowl : yogurt (2 cups).
6b. Add grated cucumber (all).
6c. Add lemon zest (2 tsp).
6d. Add lemon juice (2 Tbsp).
6e. Add minced garlic (4 cloves).
6f. Add chopped dill (fresh) or dried dill (1 tsp).
6g. Add a pinch of salt and a dash of pepper.
7. Combine all ingredients and serve. Store refrigerated.
Notes
1. If using regular cucumber: peel, cut in half lengthwise, and remove center seed part with a spoon. Grate the remaining part. Including the center seed part adds too much liquid to the sauce.
2. Using fresh ingredients where possible makes a big difference. (Lemon, garlic, dill)
