Falafel
Sometimes you need a falafel-from-scratch recipe, and here it is. Falafel goes great with tzatziki sauce.

Ingredients
1 can Chickpeas, well drained (15 oz can)
4 cloves Garlic, roughly chopped (4 cloves)
1 Shallot, roughly chopped (1)
2 Tbsp Freshly chopped parsley (2 Tbsp)
1 Tbsp Ground cumin (1 Tbsp)
1 tsp Ground coriander (1 tsp)
3 Tbsp Flour (3 Tbsp)
to taste Black pepper (to taste)
to taste Salt (to taste)
for frying Vegetable oil (for frying)
Preparation
1. Combine all ingredients except oil in food processor.
2. Form mixture into falafel balls of desired diameter (1 - 2 inches).
3. Heat 1 inch of oil in a pot until a drop of water sizzles and pops.
4. Fry falafels until golden brown.
5. Drain on a paper towel and serve hot.
